DACP is the Digital Audio Control Protocol used between iTunes and the Remote apps for the iPhone and iPod Touch, which has recently been reverse-engineered.
I have no idea why Apple doesn’t do a simple Remote app for Mac OS X, but it doesn’t look particularly hard, since there are a few old ones out there using AppleEvents.
