VoodooPad

VoodooPad is a WikiWikiWeb-like notepad for Mac OS X:

Although the full-featured version is shareware, there is now a Lite freeware version that exports to XML.

The newer versions support pen annotations, drawings, page encryption, etc. Heartily recommended.
